Pecchenino Ecole

Alta Langa DOCG, extra brut or brut dosage, from Bossolasco vineyards at 700 m, first produced in 2019.

Tasting notes

Bright straw yellow in the glass. A rich, floral bouquet with citrus notes and hints of bread crust and pastry. Fresh, creamy and mineral on the palate, with a savory, persistent finish. The perlage is fine and enveloping.

Pairs well with

Aperitif with cured meats and cheeses. Raw fish antipasti. Pasta and white meat mains. Baked fish.

Vinification
Grapes are chilled in cold storage before being gently pressed. The must obtained, after an initial settling, ferments in steel tanks. At the end of fermentation the wine is moved partly to barrique and partly to botte, where it stays on fine lees with repeated bâtonnage. It is then transferred back to steel and prepared for tirage (bottling for the second fermentation). Dosage: extra brut or brut.
Storage
Bottles are then kept lying down for over 30 months in contact with the lees. After remuage (rotating the bottle to bring the sediment to the neck), the bottles are disgorged to remove the crown cap and the fermentation lees, then topped up.
