Tasting notes

Ruby red turning garnet with age. Fruity and floral (violet, vanilla) when young, spicy and tarry after some years. Full, excellent structure, acidity not too marked, pleasant tannins; an evolving wine.

Pairs well with

Elaborate dishes, game, aged cheeses, braised dishes, roast red meat.

Vinification
Red winemaking. Alcoholic fermentation lasts 12 days at controlled temperature. After racking the wine goes into oak barrels, where malolactic fermentation starts, and ages there for 5 years with a few rackings. At least 2-3 years in bottle; to be drunk within 10-15 years of bottling.
