Tasting notes
Ruby red turning garnet with age. Fruity and floral (violet, vanilla) when young, spicy and tarry after some years of ageing. Full, excellent structure, acidity not too marked, pleasant tannins; an evolving wine.
Pairs well with
Elaborate dishes, game, aged cheeses, braised dishes, roast red meat.

- Vinification
- Red winemaking. Alcoholic fermentation lasts 10-12 days at controlled temperature (12 days on the 2019 sheet). After racking the wine goes into oak barrels, where malolactic fermentation starts, and ages there for 3 years with a few rackings. At least 2-3 years in bottle; to be drunk within 10-15 years of bottling.
