Castello di Uviglie 1491

Dedicated to 1491, the year of the first document recording viticulture on the Castello di Uviglie estate. Made from a rare Albarossa clone with small bunches and low yields, giving long-lived, structured wines.

Tasting notes

Appearance: deep, impenetrable ruby red. Nose: complex and deep, with red and black fruit jam, herbaceous notes, tobacco, black pepper, bitter cocoa and oak bark. Palate: intense and spicy, with a dense, robust tannic texture; the fruit jam and spice meet the sapidity and liquorice root typical of the Monferrato terroir.

Pairs well with

Gastronomic: first courses and tasty soups, spicy red meats, roast game and long-aged cheeses.

Vinification
Selection of grapes, destemming, alcoholic and malolactic fermentation partly in concrete tanks at controlled temperature and partly in wooden barrels, with frequent pumping over and long maceration of the skins. Refined in second-passage French barriques for 24 months, followed by a further 24 months resting in bottle.
