Piemonte DOC Merlot, chosen by the producer as an international variety among the Piedmontese reds.
Tasting notes
Dark garnet with evident violet reflections. Enveloping dark fruit, a fine elderflower vegetal note and liquorice root. Warm and persistent on the palate, straight, clean and opulent, with the fleshiness of ripe fruit.
Pairs well with
Apericena with mocetta, buttered chestnuts, lard and stuffed vegetables. Also tagliolini with rabbit sauce, carbonara, roast kid or grilled capocollo.

- Guyot; vines 5-15 years old; 320-340 m a.s.l.
- Vinification
- Hand-harvested in crates. Fermentation for 10 days on the skins with selected yeasts at a controlled 26 C, soft pressing, then 3-4 months in steel. Bottled in late spring, then at least 2 months in bottle.
