Barrel-aged Erbaluce di Caluso DOCG from vines over 35 years old, made from lightly dried grapes.

Tasting notes

Deep straw yellow with honey reflections. Ripe fruit and a light spice on the nose. Direct, savoury and warm on the palate, with toasty and nutty notes.

Pairs well with

Piedmontese fritto misto, fried and poached eggs and gratinated asparagus. Well-stirred risottos, goose pate and goat cheeses. With age, toma del fieno or a pit-aged cheese.

Pergola canavesana; vines over 35 years old; 320-350 m a.s.l.
Vinification
Hand-harvested in crates. Grapes are hand-harvested in small crates and lightly dried in a fruit loft for about 15 days. Destemmed and softly pressed, then settled. Fermentation begins in steel at a controlled 18 C and finishes in 300 l French oak barrels. 12 months in wood with batonnage, bottled the following year, then at least 12 months in bottle.
