Cantine Crosio Erb=mc2

Skin-macerated Erbaluce di Caluso DOCG, aged in acacia wood, that the producer describes as the result of twenty years with the variety.

Tasting notes

Golden and shimmering, with balsamic, citrus, candied, spicy and amber notes on the nose. Warm, soft and broad on the palate, with savouriness, freshness and good structure.

Pairs well with

Fish starters with sauces, spiced dishes such as couscous and Asian soups, first courses with wild herbs and mountain cheeses. Also fish baked in parchment and tasty white meats such as quail and guinea fowl.

Pergola canavesana; vines over 35 years old; 320-350 m a.s.l.
Vinification
Hand-harvested in crates. Destemmed and crushed, with about 10% whole grapes with stems added. Fermentation in steel for 1 month on the skins, without punch-downs, at a controlled 15 C. 12 months in 300 litre acacia wood barrels with batonnage, bottled the following year, then at least 18 months in bottle.
