Rose Metodo Classico from a red-berried variety, 18-24 months on the lees.
Tasting notes
Antique pink with coppery glints and a fine, elegant perlage. Notes of wild fruit such as small red apples, rowan, redcurrant and old red vineyard peaches. Fine freshness and good savouriness support the fleshy body, with an almond finish.
Pairs well with
Seafood salads, seared octopus, salmon and tuna tartare, and sushi. Also hot arancini, pumpkin tortelli, cotoletta alla valdostana and scaloppine alla pizzaiola.

- Vinification
- Hand-harvested in crates. Cryomaceration of whole bunches for about 7 days at 0 C. Grapes are crushed and left in the press for about 15 hours, then softly pressed and the must settled. Fermentation with selected yeasts in steel at 15 C, 9-10 months on the lees with batonnage. Second fermentation in bottle, then 18-24 months on the lees.
