Cantine Crosio Primavite

Erbaluce di Caluso DOCG named for the first wine Roberto Crosio made, and presented as a faithful expression of the variety.

Tasting notes

Bright straw yellow with light moss-green streaks. Sage, wild herbs and yellow flowers, with mineral notes and hints of hydrocarbons emerging with age. Fresh and savoury on the palate, with a finish of subtle almond.

Pairs well with

Fish stews, marinated sardines and mixed fried fish, or hot vegetable starters, vegetarian flans and fish souffle. Also raw Piedmontese fassona beef, risottos, meatballs and white-meat sausages.

Pergola canavesana; vines 15-30 years old; 320-350 m a.s.l.
Vinification
Hand-harvested in crates. Cryomaceration of whole bunches for about 8 days at 0 C, soft pressing and settling. Fermentation in steel at a controlled 15 C. 5-6 months in steel on the lees, bottled in late spring, then at least 6 months in bottle.
