Caluso Passito DOCG from dried Erbaluce, aged 36 months in wood; the name is the old Canavese name for the river Orco.
Tasting notes
Golden with fine coppery veins. Very ripe fruit such as dried apricots and dates, plus ripe hay and toasted hazelnut. A rich, glycerous palate held up by freshness and minerality, long and straight.
Pairs well with
Butter torcetti and paste di meliga, the classic Canavese pairing. Also hazelnut cake, soft amaretti, almond pastries and stuffed peaches.

- Pergola canavesana; vines 10-35 years old; 320-350 m a.s.l.
- Vinification
- Hand-harvested in crates. Bunches are dried in a fruit loft for about 4 months, then destemmed and pressed and the must settled. Fermentation in steel at a controlled 18 C. 36 months in 300-500 litre wood, bottled when ageing is complete, then at least 2 months in bottle.
