Cantine Crosio Erbalus

Erbaluce di Caluso DOCG, a fresh, easy-drinking white with citrus and spring flower aromas, aged briefly in steel.

Tasting notes

Bright yellow with fine greenish edges. Citrus notes with touches of spring flowers and alpine herbs on the nose. Fresh and savoury on the palate, with subtle toasty hints.

Pairs well with

Aperitif with buffalo mozzarella, braids and burrata. Good with herb omelettes and savoury pies, cereal soups and green lasagne. Also with crisp breaded veal cutlets, farinata and focaccia.

Pergola canavesana; vines 5-20 years old; 320-350 m a.s.l.
Vinification
Hand-harvested in crates. Cryomaceration of whole bunches for about 3 days at 0 C, soft pressing and settling. Fermentation with selected yeasts in steel at a controlled 15 C. About 3 months in steel on the lees, bottled in early spring, then at least 2 months in bottle.
