Cantine Crosio Goccianera

Canavese Barbera from 10-20 year old vines, aged 12 months in French oak.

Tasting notes

Dense, almost impenetrable garnet. Black fruit, then tobacco, coffee and cinchona woven with the balsamic quality of mountain woods. Fresh, refined and lush on the palate, balancing drinkability and succulence.

Pairs well with

Hot starters such as fonduta and bagna cauda, meatballs in sauce, baked lasagne, agnolotti or pappardelle with ragu, stews, rabbit in civet, liver alla veneziana and mountain tomes.

Vinification
Hand-harvested in crates. Fermentation for 12 days on the skins with selected yeasts at a controlled 26-28 C, soft pressing, then 12 months in French oak barrels. Bottled in summer, then at least 6 months in bottle.
