Tank-method Brut sparkling wine from white-berried grapes.

Tasting notes

Greenish-yellow, with narcissus and apple blossom moving into pear and yellow melon. Soft on the palate, with the freshness and liveliness of fine, pleasant bubbles.

Pairs well with

Festive aperitif. Try with filled puff pastries, Mediterranean crostoni, preserves in oil, parmesan risotto and white meats with delicate sauces.

Vinification
Hand-harvested in crates. Cryomaceration of whole bunches for about 7 days at 0 C, soft pressing of whole grapes and settling. Fermentation with selected yeasts in steel at 15 C, 3 months on the lees, then second fermentation in autoclave. Isobaric bottling at the end of sparkling. At least 2 months in bottle.
