Tenuta Carretta Airali Pas Dosé

A zero-dosage Alta Langa from Cissone, made from Pinot Noir and Chardonnay and aged at least 30 months on the lees.

Tasting notes

Intense yellow with golden highlights and a fine, persistent perlage. Typical, intense aroma with marked notes of bread crust, nuts, dried figs and honey. Elegant and savoury on the palate, agreeably dry and harmonious, with excellent structure.

Pairs well with

Ideal as an aperitif, it goes well with fish dishes, pasta, risotto and fresh cheeses and can be enjoyed throughout the meal.

Vinification
Whole grapes are pressed in a pneumatic press; after the first-draining must is discarded, the must from further pressings ferments at 22 °C for the base wine. Bottled for the second fermentation in March after harvest, stored horizontally in pupitres and aged at least 30 months (36 months per the page). The dosage is only a top-up with the same wine.
