A Barbera d'Alba DOC from the Cru Canova in Neive, cryomacerated with indigenous-yeast fermentation and no added sulfites, with an annual production of about 3000 bottles.
Tasting notes
Ruby with violet reflections. Complex, rich bouquet with nuances of blackberry, coriander, rose, iodine and spicy touches. Palate is true to the variety with good acidity, great balance, and a persuasive, persistent tannic-savory component.
Pairs well with
White meats, medium-bodied red meats, complex appetizers, first courses with rich, full-bodied sauces

- Soft crushing, 24-hour cryomaceration, then alcoholic fermentation with indigenous yeasts in steel at 24-26 degrees; maceration 8-10 days with daily pumping over, then three months of batonnage; malolactic fermentation; decanted at 3 degrees for 30 days natural clarification; aged in steel. No added sulfites; suitable for celiacs, vegans, vegetarians.
