Ressia Evien

A still white wine made from Moscato d'Asti grapes on the Cru Canova in Neive, cold-macerated and slow-fermented entirely in steel, with an annual production of about 5000 bottles.

Tasting notes

Intense straw yellow. Great aromaticity typical of Moscato, with floral notes, peach, apricot and acacia honey. Rich, full and round taste, of great persistence, with citrus notes.

Pairs well with

Medium to high aged cheeses, shellfish, oysters, foie gras

Vinification
Crushed-destemmed with dry ice added in tank to bring must to 0 degrees; cryomaceration 120 hours at 0 degrees; pressing to separate skins and seeds; slow fermentation about 35 days at 9 degrees; decanting in steel at 3 degrees for about 25 days, repeated 3 times without fining agents; aged entirely in steel until bottling.
