Ressia La Miranda

A Langhe DOC Bianco from Favorita and Bianco grapes grown on the Cru Canova in Neive, cold-macerated and slow-fermented, with an annual production of about 1866 bottles.

Tasting notes

Intense straw yellow. Fruity, persuasive and persistent aroma with notes of geranium turning to peach and apricot. Rich, full and round taste, of great persistence, with citrus notes, savory.

Raw fish, shellfish, white meats, grilled lamb, pizza

Grapes crushed-destemmed with dry ice added during crushing and in tank to bring must to 0 degrees; cryomaceration 96 hours at 0 degrees; pressing to separate skins and seeds; slow fermentation 35 days at 10-11 degrees; decanting in steel at 3 degrees for about 15 days, repeated 5 times without fining agents; aging in stainless steel before bottling.
