A Dolcetto d'Alba DOC from the Cru Canova in Neive, briefly cryomacerated and aged in steel with batonnage, with an annual production of about 2000 bottles.
Tasting notes
Ruby with lively reflections. Intense, typical aromas of cherry, black cherry, light notes of violet and mint with minerality on the finish. Balanced, good-bodied palate with soft tannins supported by good acidity.

- Soft pressing, 24-hour cryomaceration, then classic alcoholic fermentation in steel at 22-24 degrees; maceration 4-5 days with daily pumping over, then pressed to separate skins and seeds from liquid; after malolactic fermentation, batonnage for at least 3 months, then aging in steel up to one year before bottling.
