Ressia Vigna Canova

A Barbera d'Alba DOC Superiore from the Cru Canova in Neive, barrel-aged 24 months, with an annual production of about 6000 bottles.

Tasting notes

Bright ruby with garnet reflections. Complex, rich bouquet with nuances of blackberry, coriander, rose, iodine and spicy touches. Palate true to the variety with good acidity, great balance, and a persuasive, persistent tannic-savory component.

Vinification
Soft pressing, classic alcoholic fermentation in steel at 28-32 degrees; maceration 10-12 days with daily pumping over; three months with lees kept in constant movement for mannoprotein extraction and malolactic fermentation; 24 months aging in French Allier oak and Slavonian oak casks, then finished in steel before bottling, followed by bottle aging. Also produced in Magnum format with the same profile.
