Bâtonnage

Bâtonnage is Pietro Rinaldi's Langhe DOC Arneis aged about 12 months on its lees with periodic bâtonnage.
Tasting notes
Deep bright straw yellow. Intense nose of white flowers, hints of rosemary, sage and chamomile. Fruity with a typical almond note in the finish, nice mineral notes, full bodied with a very long aftertaste.
Pairs well with
Starters and pasta dishes, fish and crustaceans thanks to its mineral, dry character; also a good aperitif.

- Vinification
- Draining and soft pressing, fermentation in temperature-controlled stainless steel vats at 10-12°C. After alcoholic fermentation the wine is chilled to 4-5°C to avoid malolactic fermentation, then aged about 12 months in an inox steel tank on the original primary-fermentation lees, with periodic bâtonnage (lees stirring) to enhance mouthfeel and aromatic complexity.
