Vinification
Grapes dried on racks in naturally ventilated spaces between September and October, then gently pressed with skin selection for maceration. Fermentation runs at controlled temperature for up to 6 months and stops naturally from the concentration of sugar and alcohol, without filtration. Aged 2 years in old wood barrels. Alcohol 13% vol.
Serving temperature
Store the bottle lying down, in a cool, dark place; serve at 12°C in small glasses for passito and meditation wines. Keeps well for several days after opening; can age for decades.
