- Vineyard planting
- Caricalasino is a rare native Piedmontese white grape, once grown alongside other whites and later abandoned in favour of the more profitable Cortese; the Marenco family replanted it and helped save it from extinction. It arose from a natural cross between Timorasso and the Ligurian grape Crovin di Perti.
- Vinification
- Grapes hand-selected in the vineyard and picked into small crates, fermented in 225-litre wood barrels where the wine ages on its lees for about 9 months. Alcohol 13% vol.
- Serving temperature
- Serve in medium-large glasses at 12°C.
- Storage
- Store in a cool, dark place; let the bottle rest a few minutes after opening. Suited to ageing.
