Tasting notes

Ruby red with garnet reflections. Red fruit and spice on the nose. Pleasant acidity that brings freshness. Fine, sweet tannin.

Pairs well with

Piedmontese meat dishes, Hungarian goulash, Japanese gyoza and yakiniku, black cod, American beef cuts including brisket and beef ribs

Vinification
Manual harvest, destemming and crushing. Spontaneous fermentation in large concrete tanks at 22-28 C for about 15 days, then 20 days of submerged cap maceration with malolactic fermentation. Aged over 24 months in large Slavonian oak barrels, then in concrete before bottling.
