An Ovada DOCG from 40-year-old Dolcetto vines at Rocca Grimalda, made to be aged for extra elegance and structure.

Tasting notes

Deep red, with a fine, elegant nose of wild rose, redcurrant, blackberry and just-ripe raspberry, ground white pepper and bitter almond. Dry, very fresh, full-bodied and warm on the palate, slightly astringent, with a fine, persistent, pleasantly bitterish finish.

Pairs well with

Best with red meat, flavourful poultry and aged cheese; also poultry, white roast meat and cheese.

Vinification
Maceration for 7-8 days at 25-26°C; alcoholic fermentation at controlled temperature (26°C) with regular délestage.
