A barrique-aged, lees-worked Chardonnay from 30-year-old vines at Rocca Grimalda, the estate's more structured white.

Tasting notes

Crystal-clear, sparkling pale yellow. Intense, persistent, very fine nose of flowers, dried yellow flowers, ripe and withered apples, liquorice root, tobacco leaf and wood. Dry, fresh and full-bodied on the palate, warm, with a light tannic hint and a savoury, bitterish finish.

Pairs well with

Its fermentation-derived soft tannins make it a good match for slightly fatty food and white meat; also good with mature cheese.

Vines about 30 years old at 260m altitude on a hillside; upward-trained vertical trellis, Guyot-pruned, planted at 0.90m x 2.60m, about 4,270 vines/ha.
Vinification
Soft pressing of whole bunches; fermentation in barriques at controlled temperature (23-24°C), followed by élevage sur lie with manual bâtonnage (twice weekly at first, then once); aged about 12 months.
