A Metodo Classico sparkling wine from Chardonnay with a small share of Piedmontese red grapes, aged 30 months in the estate's underground cellar.
Tasting notes
Golden blond with green reflections and a very fine, persistent perlage. Intense, complex aromas recalling white-fleshed fruit such as peach and pear. In the mouth it shows interesting savouriness and minerality, balanced between body and freshness.
Pairs well with
Excellent as an aperitif; its versatility makes it a good match for every course.

- Guyot training, in rows about 2 metres apart; 7,500 kg of grapes per hectare, 60% must yield
- Vinification
- Metodo Classico. Fermentation at low temperature in steel for about 3-4 weeks, followed by some bâtonnages. Bottling for the second fermentation in spring with selected yeasts, which lasts about 5-6 months. Foam formation and bottle ageing last 30 months in total, in the estate's underground cellar (the "crutin") at a constant 16 degrees all year without air conditioning. Riddling is done by hand.
