Barolo from Paiagallo, which the producer calls one of the most historic vineyards in the commune of Barolo, on sandy marl soils. 14.5% alcohol.
Tasting notes
Pale red with orange reflections. Dried cherry, walnut and citrus peel, full body with slightly firm tannins and a long, balanced finish.
Pairs well with
Important meat-based first courses, braised meats and flavourful cheeses.

- Destemming and crushing, controlled fermentation at 28 C, about 20 days of maceration. Malolactic fermentation in steel in November. About 24 months in French and Slavonian oak up to 60 hl, new to 10 years old. At least 10 months in bottle before release.
