- Vinification
- Grapes go straight to the press after harvest for about 5 hours of cryomaceration. The free-run must is separated from the coarser lees and fermented at controlled temperature in barriques, where the wine rests about 8 months on its fine lees before bottling in the spring after harvest. 13.5% alcohol, acidity 5.60.
