The Latin motto on the label, "Sator Arepo Tenet Opera Rotas," marks the 1990 purchase of this Mango hillside, passed down through three generations: Giuseppe, Giacomo and Giuseppe again.
Tasting notes
Bright straw yellow with nice froth and rich perlage. Extraordinarily fresh and variegated, with fresh fruit, orange blossom, rose and musk. Gracefully sweet with characteristic aromaticity, delicious and lingering.
Pairs well with
Fruit and fruity desserts, pastries, panettone, hazelnut tart, and Castelmagno cheese. Excellent as an aperitif.

- Maceration on skins for several hours in a horizontal press, then off-skin vinification with prise de mousse in temperature-controlled pressurised tanks at about 4°C for 20 days, followed by cooling to -4°C, micro filtration and bottle ageing.
