- Whole-cluster pressing, first 5% of the must discarded and the cuvée taken up to 50%. Fermentation partly in steel and partly in new Allier French oak tonneaux. After spring assembly and tirage, at least 36 months on the lees at 13°C. No sugar added at disgorgement.
