- Vines average 30 years old.
- Vinification
- Crushed and destemmed, then spontaneous alcoholic fermentation with indigenous yeasts in contact with the skins in temperature-controlled steel tanks. Dry racking and transfer. Malolactic fermentation carried out entirely immediately after alcoholic fermentation. Filtered and bottled, resting in bottle at a constant 14°C for a month before release.
