- Vines average 18 years old.
- Vinification
- Crushed and destemmed, then spontaneous alcoholic fermentation with indigenous yeasts in contact with the skins in temperature-controlled steel tanks. Dry racking and settling with transfer to steel tanks, cold stabilisation in place of fining, and filtration through 0.45-micron steel-housed cartridges. Malolactic fermentation carried out entirely in steel immediately after alcoholic fermentation. Aged in steel tanks until bottling, then rests in bottle at a constant 14°C before release.

- In stainless steel for some months until bottling. Bottle rest at 14°C before release.
