Named after grandfather Pietro Colla, who learned bottle fermentation directly from someone sent to France to study it and worked his life with the champenoise method, this Metodo Classico blends Pinot Nero and Nebbiolo, both grapes noted for ageing. The estate favours regular grape ripening over the early harvest typical of sparkling-wine production.
Tasting notes
Complex, rich, persistent and very fine bouquet with hints of bread crust, white flowers and aromatic herbs. Dry taste, vinous, strong, pleasant and elegant structure, with a great body covering the edges of the acidity.
Pairs well with
Aperitif, but mainly for the whole meal
