Le Marie Viso Rosé

A rosé metodo classico pas dosé from native black grapes, about 90 months on the lees. About 5,000 bottles a year, 13% vol.

Tasting notes

Salmon colour tending to onion skin (pelure d'oignon), fine persistent mousse. Long lees contact gives bread crust and brioche aromas with fruit (clear morello cherry) and floral (fresh, sometimes withered, red rose) notes. Fine perlage, fruity and floral freshness, tannin adding structure and complexity.

Pairs well with

All-meal sparkling wine: aperitif and starters, delicate and sweet-leaning dishes such as molluscs, crustaceans and fish (also caviar), pasta and risotto, young and soft cheeses, and fatty red meats.

Vinification
Early harvest for a sparkling base wine, brief cold settling, fermentation at about 16 C after 36 hours, the base wine settles naturally in steel tanks outside during winter, bottling for the second fermentation in spring, about 90 months resting in the cellar.
