A 100% Dolcetto from Assarti, aged only a few months in steel. About 4,500 bottles a year, 13% vol.
Tasting notes
Purple red with violet reflections. Notes of morello cherry and wild berries. Fruity on the palate (cherry, plum, blackberry), with alcohol balancing astringency and structure, and a pleasantly almondy finish.
Pairs well with
Everyday wine that goes with cured meats, roasts, white meats and soft or semi-hard cheeses.

- Vinification
- Destemmed and crushed grapes go into steel fermentation tanks, 4 to 6 days of maceration, temperature-controlled fermentation with frequent pumping over, malolactic fermentation, then a few months in steel.
