Tasting notes
Intense, penetrating bouquet of dog rose, blackberry and wild strawberry, peach and sweet spice. Soft, classy entry, vigorous fresh fruit, a gentle tannic weave and a saline finish.
Pairs well with
Stewed stockfish, stuffed guinea fowl, snails in spicy sauce.

- Vinification
- Grapes are hand-picked in October. After gentle pressing, the must ferments on the skins in cement vats for about 25 days, with daily pump-overs and a délestage halfway through. Aged about 12 months, depending on the vintage, in 25hl casks of Fontainebleau oak.
