Tasting notes
Plum, raspberry and blueberry, with a delicate hint of wisteria. Very easy to drink, well balanced, with vibrant acidity and freshness.
Pairs well with
Raw-milk cheeses, cured meats, risotto.

- Vinification
- Grapes are hand-picked in October. After gentle pressing, the must ferments on the skins in steel tanks for about 10 to 15 days, with daily pump-overs and a délestage halfway through. Aged for several months in large 50hl French oak casks.
