Harvest
By hand, in the first half of October
Vineyard planting
Guyot training, about 4,500 vines per hectare. Average vine age about 35 years. Total area around 1.2 hectares.
Vinification
Fermentation and maceration: 10-12 days in stainless steel at 29-31C. Ageing: 12-14 months in French oak barrels (500 l) and/or Slavonian or French oak casks (20-40 hl), 2 months in stainless steel and at least 2 months in bottle. Bottled in spring of the second year after harvest.
Storage
Ageing potential 6-10 years
