Organic Langhe Bianco DOC 'VII', 100% Chardonnay from a single hectare in Castiglione Falletto, fermented and briefly aged in steel.
Tasting notes
Golden straw colour, bright and radiant, with good liveliness. Warm, complex, high-impact bouquet with wide fruity and aromatic expression (yellow peach, citrus, exotic fruit), notes of hay and dried flowers, acacia honey, on an intensely mineral base with flint. Rich, creamy, almost buttery on the palate, with juicy fruit, a marked almond note, calibrated acidity and a long, nervy mineral undertone, finishing fresh and long.
Pairs well with
Excellent as an aperitif and with cold starters, first courses, pasta and risotto, fish and vegetable dishes, elaborate seafood cooking and white meat.

- Spurred cordon Guyot, 5,000 vines/ha; average vine age 25 years; yield about 90 quintals/ha.
- Vinification
- Direct pressing of the grapes; the free-run must from the first and second pressing goes into a temperature-controlled steel tank at about 16°C to stop fermentation starting. After 3-4 days of settling, with the lees removed, fermentation starts with selected yeasts, dropping from 18°C to 10°C to develop aroma. Aged in steel for 3-4 months.
