Francesco Sobrero Parussi

Barolo DOCG from the single Parussi cru in Castiglione Falletto, about 2,000-2,500 bottles a year from a hectare of vines on sandy, calcareous soil.

Tasting notes

Deep garnet red. Ethereal and enveloping, with intense, persistent floral and sweet spice notes, sandalwood and faded rose. Structured, powerful palate with soft, elegant tannins, closing fresh yet savoury.

Pairs well with

Beef braised in Barolo, red meat and game, medium to long-aged cheeses.

Vinification
Fermentation and maceration at controlled temperature in steel, submerged cap, about 50 days, with manual and automatic pump-overs. Malolactic fermentation in steel; aged at least 24 months in large oak barrels (about 25 hl), Slavonian oak per the estate cellar. Bottled unfiltered.
