Dolcetto d'Alba DOC 'Selectio', 100% Dolcetto from 0.7 hectares in Castiglione Falletto, aged six months in steel and three in bottle.
Tasting notes
Intense ruby with good depth and brightness. Dense, lively, warm nose of real substance with vivid red fruit, violet, undergrowth, hints of rosemary and bouquet garni, forming a rich, complex, fragrant whole. Full, rich palate with well-developed, fleshy fruit, broad and structured, balanced by calibrated acidity, very long persistence without losing drinkability. A Dolcetto of strong character and backbone with a marked mineral streak.
Pairs well with
Good with well-structured meat dishes, elaborate hot starters, meat mains, and also with fish and vegetable dishes, elaborate seafood cooking, and white meats.

- Spurred cordon Guyot, 4,500 vines/ha; average vine age 10-25 years; yield about 80 quintals/ha.
- Vinification
- Fermented in steel tanks at about 26°C for 7-8 days with pump-overs. After racking, static settling for about a week, then an airing rack and malolactic fermentation. Aged at least six months in steel and three months in bottle before release.
