A rosé metodo classico sparkling wine made entirely from Nebbiolo, resting 36 months on the lees.
Tasting notes
Delicate pink colour with a fine, persistent perlage. Broad, floral, varietal aromas of rose with slightly spicy notes of cinnamon. Well balanced, full, elegant and long on the palate, with hints of bread crust and yeast and a soft tannin.
Pairs well with
Aperitifs, fish dishes, grilled dishes, carpaccio, shellfish, seafood, cheese, and fried foods.

- End of August to the first week of September, from a careful selection of the most suitable areas.
- Vineyard planting
- A particularly low-yield selection of fruit (no yield figure published).
- Vinification
- After a short stop in the cold room, whole bunches are softly pressed at a particularly low yield, then alcoholic fermentation runs in stainless steel at a controlled temperature of up to 18°C. The wine undergoes a second fermentation in bottle by the classic method, resting 36 months on the lees, then a further 6 months of refinement after disgorgement before release.
