Cascina Gilli Neuv

Neuv is Cascina Gilli's flagship Nebbiolo, an Albugnano DOC Superiore made under the local "Associazione 549" rules from the estate's highest, most limestone-rich Schierano plots.

Tasting notes

Ruby red with garnet shades. The nose opens on fruit and dried violet, followed by notes of evolution, leather and fresh coffee, well integrated with a touch of sweetness from the wood. On the palate it stands out for its structure and dense tannic texture, giving a long, intense finish with an aromatic retro-olfactory character. The wine has the potential to grow in importance over the next 10 years, particularly in structure.

Pairs well with

Second courses of meat with important flavour and succulence, such as traditional Piedmontese fricandò or fillet Rossini style.

Vinification
Grapes from the Schierano vineyards, the estate's highest and most limestone-rich plots, are hand harvested and only the best bunches are selected. Maceration on the skins lasts about 20 days (compared to about 12 for the Notturno), with délestage intensified through the day for deeper extraction. Ageing is 25% in first-passage French oak barriques for about 18 months, plus 9 months in bottle, per the internal rules of the local "Associazione 549".
