Gilli Extra Dry, born in 2019 from research with the Cantina Sperimentale del Bonafous, is a rosé sparkling wine made purely from Malvasia di Schierano using the Charmat-Martinotti method.
Tasting notes
Bright pink with a delicate, persistent perlage. Raspberry and wild strawberry aromas with grassy notes; on the palate the wild strawberry typical of Malvasia di Schierano is prominent, its freshness balanced by residual sugar for a pleasant sip.
Pairs well with
As an aperitif or with delicate first courses and fish; also finger food and spicy dishes.

- Vinification
- An early harvest of Malvasia di Schierano captures its aromas and acidity. Grapes are hand-picked, destemmed and the whole berries gently pressed with no pre-fermentation maceration; a second fermentation in steel tank follows the Charmat-Martinotti method at low temperature with selected yeasts, reaching 12.5% alcohol with a little residual sugar, then ages three months in steel.
