Cascina Gilli Gilli

Gilli is the estate's signature Malvasia di Castelnuovo Don Bosco DOC, a mildly sparkling, low-alcohol (5.5%) sweet red wine made from Malvasia di Schierano and Malvasia Nera Lunga grown on the historic Bricco Gilli vineyard around the winery.

Tasting notes

Ruby red with purple hints and a fine perlage. The nose shows small red berries with floral hints of rose, honeysuckle and iris. Rich and powerful on the palate, with good balance between acidity, residual sugar and flavour concentration, and a fresh, long finish.

Pairs well with

All kinds of desserts, especially red berry tarts and fresh, dry pastries.

Vinification
Hand-picked grapes are destemmed and gently pressed to avoid extracting unwanted components from the seeds. Skins and must macerate briefly at low temperature to extract colour and delicate aromas while avoiding oxidation. The must is drawn off the skins, filtered and kept cold, then moved to steel tanks where, following the Asti Method with selected yeasts, alcoholic fermentation is stopped once it reaches 5.5% by volume; the wine is sterile filtered and bottled soon after.
