Moyé is Cascina Gilli's lightly sparkling Bonarda, a rare Piedmontese variety often confused with the Oltrepo Pavese wine of the same name; it is refermented naturally in autoclave for a soft, easy-drinking style.
Tasting notes
Soft on the palate, with wide aromas in which blackberry and a delicate spicy note stand out. The moderate liveliness makes it even more pleasant, accentuating freshness while keeping balance.
Pairs well with
Braised or stewed meats, or a traditional Piedmontese fritto misto.

- Once alcoholic fermentation by selected yeasts ends, the new wine rests for some weeks at 18C to help complete malolactic fermentation. Natural settling and separation of the lees follow, with refinement in steel. In spring, shortly before bottling, a small amount of wine kept sweet is added, starting a new fermentation that gives the wine its typical bubbles.
