Metodo classico rosé sparkling wine made from 100% Nebbiolo, disgorged after about 34 months on the lees; about 13% ABV and roughly 3,500 bottles from the 2021 harvest.
Tasting notes
Onion skin pink, bright, with a fine and persistent perlage. Delicate nose of fresh red fruit over a base of bread crust. Lively, dry, full bodied, with the variety's typical character.
Pairs well with
Raw fish, fried fish, cured meats; excellent as an aperitif or through a whole meal.

- Whole clusters pressed off the skins, then fermented for 20 days at 15°C; no malolactic fermentation; classic method with tirage in September 2022 and disgorgement in July 2025, about 34 months on the lees.
