A Metodo Classico Extra Brut dedicated to the producer's father Enrico, first released with the 2012 vintage. About 2,000 bottles are made, each carrying his signature.
Tasting notes
Fine, persistent bubbles; straw yellow with golden reflections. Fruity, citrus and mineral aromas; silky, enveloping palate, long and savoury finish.
Pairs well with
Seafood and land starters, shellfish, raw fish, ravioli al plin, white meat, cured meats, fresh and aged cheeses.

- Whole-bunch pressing; free-run must fermented in temperature-controlled steel. Blended in spring, selected yeasts and 24 g/l sucrose added, bottled under crown cap and rested horizontally; at least 60 months on the lees in bottle. Alcohol 13%.
