Gavi del Comune di Gavi DOCG from Gavi vineyards around 30 years old, 100% Cortese, 12.5% ABV.
Tasting notes
Still, intense straw yellow, with refined fruit, floral and mineral notes, notably almond, linden and flint depending on evolution. Subtle, elegant and fine; crisp and savoury, with a balanced, lingering finish.
Pairs well with
Aperitifs; first and second courses of fish, shellfish, white meat, carpione-style dishes, delicate cured meats, fresh or short-aged soft and stretched-curd cheeses.

- Vines about 30 years old. Guyot. Yield 95 quintals per hectare. Low-yield vineyard care with frequent cleaning, green pruning, thinning and minimal chemical treatments.
- Vinification
- Careful selection, then a cold white vinification with about 24 hours of partial skin maceration and gentle pressing. The free-run must ferments in steel at controlled temperature with selected yeasts. Low total sulphites.
