The estate's no-added-sulfites Dolcetto d'Alba, first made in 2015 as an experiment, from organically grown grapes in Rodello.
Tasting notes
Very deep ruby red with violet reflections. Very vinous nose with ripe fruit such as sour cherry and blackberry. Broad and structured on the palate, with a dense texture, enveloping softness and light tannin.
Pairs well with
Versatile: white and red meats, starters or first courses.

- Vinification
- Made with no added sulfites in any form at any stage, including bottling (below 10 mg/l); natural grape-skin and seed tannins serve as the preservative. Maceration of 7-10 days with several daily pump-overs and two délestages, then about 8 months in stainless steel before bottling.
